Comté Reserve 30+ Months
Hard Cooked, Raw Cow's Milk  Franche-Comté, France
Belonging to the Gruyère family,  Comté  is made from raw cow's milk. Comté is one of the most popular cheese in the world, and rightly so! Our Comté has been aged for 30 months and is nutty, fruity and long on the palate. The paste is speckled with crunchy crystals, and is rich and creamy in flavour.

Colston Basset Stilton
Blue Vein, Cow's Milk • Nottinghamshire, England
Colston Bassett is one of the smallest Stilton dairies in the UK. Flavours are rich and lactic with a wonderful balance of blue mould spice, earthy and buttery notes. The curd is still hand-ladled before draining, which preserves its structure, resulting in a luscious, creamy texture. A true old school blue!

Long Paddock Driftwood
Bloomy Rind, Cow's Milk  Castlemaine, Victoria
Farmhouse cheese makers originating from France operate this exceptional dairy in Castlemaine, Victoria. Long Paddock produce highly authentic, quality cheeses that stem from a wealth of knowledge about cheese-making. Driftwood is a washed-rind cheese in the style of Vacherin, wrapped in spruce bark, The cheese develops complex aromas that layer buttery, forest floor, grass, hay with much darker and adult aromas as the cheese matures.

Ortiz Anchovies
These salty, umami anchovies are caught off the Cantabrian coast of Northern Spain. They are cured in salt for five months before being hand filleted, and packed in olive oil. A versatile pantry staple: add to pasta, crusty bread or eat straight from the tin.

Borgo Salami
This Borgo pure pork is a simple, home-style cured salami - and great on a charcuterie plate, sandwich or snack. Ivo Borgo, the founder of Borgo salumi, immigrated to Australia in the early 1950s from the small town of Arsiero in Veneto, Italy. Bringing with him the Northern Italian salami making techniques passed on to him by his father.
