Liv is the newest member of the Spring Street Cheese Cellar team. Liv had managed the Leo’s cheese counter in Hartwell for years, after which she moved on to work for Milk The Cow where her passion for cheese and wine developed further eventually piquing her interest in affinage, which is what brought her to us. We couldn’t be happier with the addition of this positive, loveable and highly talented member to our small team. She has put together a perfect selection of cheese, wine and treats she wants you to try.

Semi-Hard, Goat's Milk • Pyrenées, France
This unusual semi-hard 'Tomme' from the Pyrenées is made from hand ladled curds at the small Fromagerie Jean Faup. Made exclusively from goat's milk collected in the Ariege and La Haute-Gargonne regions. It has a distinct earthy aroma not dissimilar to mushrooms and wet hay. Bursting with animal and citrus flavours with a woody, nutty profile due to its 6 months of ageing. A truly spectacular cheese and one of our favourites here on Spring Street.
L'Artisan Mountain Man
Washed Rind, Cow's Milk • Mortlake, Victoria
Third generation cheese maker Matthieu Megard has created a washed rind with slightly pungent yet round and complex flavours. Its recipe originates from the Reblochon tradition in the French Alps where cheesemaker Matthieu grew up. Made out of pasteurised milk, it is surprisingly complex in taste and soft in texture. This cheese reflects the harsh climate of the Great Ocean Road’s shipwreck coast.
Berry's Creek Riverine Blue
Blue Vein, Buffalo Milk • South Gippsland, Victoria
Riverine is the only buffalo milk blue cheese made in Australia! Buffalo milk has a slightly higher fat content than cow's milk, and the result is an extremely smooth and creamy cheese. The cheese is slightly sweet, with almost fruity flavours complementing the beautiful texture. A lightly salted and spiced blue with a must-eat rind that is bursting with barnyard characteristics and nutty flavours such as pistachios.
Hunted + Gathered Salt and Pepper Chocolate
This Cacao sourced from ZorZal Cacao in the Dominican Republic is made by Cremorne based chocolate makers Hunted + Gathered. They make rich 70% cacao products with extraordinary maple, malt and nutty profiles. These organically made chocolates contain little sugar and the perfect amount of acidity.
Amarena Fabbri Cherries in Syrup
These Italian Amarena cherries are jarred in a rich syrup that adds sweetness without taking away from the cherry’s beautiful sour notes. These cherries paired with goat's cheese are a match made in heaven.
Bacco's Italian Flat Bread
Bacco’s flat bread are a baked product inspired by the popular Southern Italian crunchy. Handmade using sustainable wheat flour, extra virgin olive oil, white wine, sea salt and fennel seed for flavouring. Fennel seed is known to have a palate cleansing property which enhances the flavour of any food and drink consumed alongside it. The particular handmade preparation and high quality, considered ingredients make these an extra special choice.
