From the Canton of Appenzell in northeastern Switzerland comes this fantastically robust and aromatic cheese. Its history dates back at least 700 years - with the making involving a special brining process made up of a solution of wine, herbs and spices. This adds to the complex flavours that develop in this cheese; savoury florals, roasted nuts and mineral notes. The paste is dotted with those wonderful crunchy crystals that we has grown to love. Appenzeller is a wonderful example of traditional, Swiss mountain cheesemkaing at its best.
