A family recipe from a traditional Italian family. Peperonata is made from slow cooked capsicum and onion and herbs with vinegar. Predominately used on antipasto boards. The sweetness of slow cooking capsicums and the addition of a little vinegar gives it the balanced agro dolce (sweet and sour) flavouring that pairs so well with cured meats and hard cheeses.
