Brie Fermier is a refined cheese with a balanced appearance and sweet smell. The rind on younger cheeses should be white and velvety and has a slight aroma of mould and mushrooms, as the cheese ages the rind develops reddish-brown spots, it’s at this stage that the paste of the cheese tastes its best.
The interior is compact and even-textured with the colour of straw. The flavour is rich and condensed, showing slightly sweet and even smoky elements. On more mature wheels the flavour intensifies and becomes almost spicy, the paste will also bulge and in some cases become runny.
