As it matures, Affidelice is pampered with regular washes of Chablis (a local Chardonnay) mixed with salty water, enhancing its unique flavours.
The mild, savoury taste beautifully balances the cheese’s strong, aromatic scent, finishing with a delightful hint of sweetness. It pairs wonderfully with sweet and tangy fruits, and is an excellent match for dry white wines like Chardonnay and, of course, Chablis.
