Four Pillars Moonshine is a semi-hard cow’s milk cheese made in the Yarra Valley by Stone & Crow Cheese. This is a limited-edition version of cheesemaker Jack Holman’s Moonshine variety, made in collaboration with Four Pillars gin.
This cheese is a celebration of the qualities of both the gin and the cow’s milk. Overall, its aroma is reminiscent of damp forest undergrowth and fresh pine needles. On the palate, the gin qualities shine through with fruity notes of raspberries and juniper from the botanic and also show classic Australian bush and lemony aroma on the rind.
