Persille de Chevre is a feat for the eyes with an ashy exterior, fudgy, ivory white interior and bright-blue veins streaking throughout its paste. It’s almost too beautiful to eat, but with its sweet creamy undertones of earth, hay, caramel, and white pepper, how could you not?
