A washed rind cow's milk cheese from Champagne in France. Naturally because this cheese originates from Champage it is also washed in Champagne! Langres is one of very few cheeses that are not turned during there maturation causing a small well in the top. If your feeling particularly decadent pour some sparkling wine in the well and serve!
