Persille de Chevre is a decadent goat’s milk Blue Vein. This cheese is produced 45 kilometers south-west of Paris in the province of Ile-De-France.
Persille de Chevre is a feat for the eyes with an ashy exterior, fudgy, ivory white interior and bright-blue veins streaking throughout its paste. It’s almost too beautiful to eat, but with its sweet creamy undertones of earth, hay, caramel, and white pepper, how could you not?
