Tête de Moine - literally translated to 'Monk's Head', was invented by Monk's in Switzerland many years ago. It is not only cut, but can be shaved into thin, twirly rosette shaped slices using a special knife called the “Girolle” or the “Pirouette”.
The flavour is full-bodied, fruity and aromatic, with a strong spice and lingering aftertaste.
