Tomme De Brebis et Chevre is a semi hard, mixed milk cheese. It is made exactly like the famous Ossau Iraty, with a similar appearance the only difference is the mixture of milks (goat and sheep).
Tomme De Brebis et Chevre displays balanced flavours of cooked caramel, some lactic sweetness and hints of citrus.
